Week 8 ~ Day 4

Happy Monday Everyone!  I have to make this post short and sweet since I have LOTS to get done today. My 2 oldest kids are in a play and I am in charge of the costumes so my days are pretty full right now.  I "took one for the team" this Saturday when I had a piece of cherry pie with ice cream (I promise I'll explain this one in tomorrow's post).

So without further ado, here is what I ate this weekend:

Friday
Breakfast: My morning shake, green tea
Lunch: Chef salad with ranch dressing
Took my sister and her husband to the VA hospital in Cheyenne, Wyoming and ate in the hospital cafeteria.  Made the best food choice that I saw available.
Dinner: Cauliflower Crust pizza; almond butter and Redi-Whip
Thank you Amber and Rosalie for posting your recipes (follow the links I added to their names and you'll go straight to their recipes).  It was awesome.  I was in a rush and didn't take the time to properly "crisp" up the crust so I'll have to work on that next time.

Saturday
Breakfast: My morning shake, white tea
Lunch: Perkins strawberry pecan salad
My family (my parents and my sister and her family) and my in-laws took the kids to the pool Saturday morning and then they took us out to eat lunch
Dinner: 2 Hot dogs, sauerkraut, cheddar cheese, 1/2 piece of cherry pie with ice cream (I'll explain in tomorrow's post)

Sunday
Breakfast: My morning shake, green tea
Lunch: Mimi's 1/2 quiche lorraine; salad with ranch
I mentioned to the waitress at Mimi's that I was eating low-carb and she brought me the menu's nutritional information.  I love the quiche lorraine and since the entire quiche had 12 grams of sugar, I decided to still order it, but eat only 1/2, and bring the other 1/2 home.  It comes along with a side salad and after eating the salad and 1/2  ofthe quiche, I was full! 
Dinner: 2 piece Little Ceasar's pepperoni pizza
Snack: Velvetta cheese with crackers (don't usually eat Velvetta but it was left over from a function that we made food for)

We have lots of smoke in the air due to a fire that's burning in the mountains to the west of Fort Collins, Colorado (which is the next town over from us).  Will post more about it tomorrow with some photos.

  1. It sounds like you made good choices:) Nothing is off limits as long as you limit to the 5/2 or as close as possible!
    Fires are no fun, I watch the news coverage and am thankful we don't have them often.
    Thank you for the link that you sent. It really explained the gain in a helpful way. I always knew it was from fluid retention, but she explains it so thoroughly. We will see if it comes off this week!

  3. Stay safe with the fires. I remember being in South Denver and waking up to ash everywhere! Don't take any chances! Thanks for the link back with the recipes too!

  4. You sound like one busy lady! :) Your food choices sound good; waiting to hear what that pie and ice cream is about. Are the fires dangerously close, or is it just the smoke that is reaching you because of the wind?

    1. Hi Daisy... We are about 20 miles from the foothills were the fires are burning. We are not in any danger of the fire reaching us but the smoke is terrible - the winds have shifted today and we are having to keep our windows closed. Ash and pieces of charred material are falling in Fort Collins which is the town that borders our town (Windsor). 30,000 acres have burned already with 0% containment. We need rain to fall soon! :(

  5. I love pie ... we live close to several farms that make some of the best pies ever. One is a local organic farm and they make pies in an outdoor wood oven (much like you would find roadside in France) ... sigh. I was thinking the other day that I'm going to have to come up with a belly good version of pie since it will be hard to make it through the upcoming season without it. It will be extra challenging since I can’t use wheat flour either … hmmm …

    1. Hi Trina. I love pie too. We have lots of rhubarb so my husband makes a wonderful rhubarb cherry pie!! Let me know if you come up with anything. Once my kids are done with this play that I am helping with costumes for, I may do a little research as well to see what I can find. Have a great day!

  6. My friend has a coconut flour pie crust that she brought to our get together last week. I am not a fan of coconut flour, too dry, but everyone else thought it was great. I'm sure you could find it on pinterest. I know that it had coconut oil too.
