Smoked Chicken, Gardening, and the Solar Eclipse (Week 5 ~ Day 4)

I had such a lovely Sunday..... Went to church, planted some flowers,spray painted the patio table, watched the eclipse, and my husband smoked us some delicious chicken in his new smoker that he got for his birthday.  If you've ever smoked chicken you know what I'm talking about - delicious and moist!!

On the food front, here's what I ate yesterday:

Breakfast: My morning shake; Herba Mate Chocolate tea

Lunch: 2 Beef tacos (with beef, cheese, lettuce, onion, cilantro)

Dinner: Smoked chicken breast, small baked potato with butter, iceberg lettuce w/ blue cheese dressing

Snack: Almond butter with Redi-Whip

I would LOVE to see the 140's when I weigh-in this Friday. I'll be working hard to get there. Hope you have a great BFC day - Stay stong!!

    Folks, the grand temptation she left off the menu was the smores! She passed them by like a BFC Champ! The way you're going, you'll make it 140's.

  2. (Yep.. that comment would be from my husband. He reads my blog but has never commented so I was surprised when this came through) :)

    Yes, I forgot to mention that my entire family made smores last night and I didn't have one single bite!! It really is getting easier to by pass the sweets the longer I stick to the plan because I have my arsenal of BFC desserts in the house when I want something sweet (like dark chocolate, Redi-Whip, and almond butter). And yes, I'm going to continue to work really hard this week to get down to the 140's (my family can continue to eat what they want, but I'm sticking to the plan)! :)

    And no, those aren't the flowers we planted yesterday because I forgot to take a picture after all of the eclipse activity. But I had taken the picture of the Salvia earlier in the day so that's all I had to post. :)

  4. The smoked chicken looks great! I want to grill a lot this summer myself. Love the photos from eclipse, we watched it too, but the kids were not that into it. The 140s will be great and are right around the corner!!

  5. Hi Kim! I don't know why it took me so long to find your blog! Loved your pictures! What a great looking smoker. I have never tried meat cooked in one of those, although I've used those smoker bags before and LOVED the taste. I'm trying to get into the 150's by next week! I hope we both reach our goal!

  7. Thanks ladies! I've never had such great tasting smoked chicken as I did with our new smoker. It only took 2 1/2 hours and it was done - so super easy!!
