Lettuce from the Garden (Week 10 ~ Day 7)

Had a better day yesterday and was very satisfied after all of my meals.... didn't have the constant hunger like the day before.  Here's what I ate:

Breakfast: My morning shake, green tea

Lunch: Salmon patty, english muffin (one half with butter and Nature's Hollow jam, the other half with butter and Nutritional Yeast), green salad (from my garden - see story below) with creamy ceasar dressing, BFC Italian Soda (knew I wanted to make this as soon as Amber posted it.  Follow the link to her recipe) - All of my kids as well as myself, loved these!! :)



Dinner: Fried chicken (1 piece), stir-fry, green salad with sunflower seeds, beets, cheese, and ranch dressing; sugar-free ice cream
My parents took us out to dinner at a buffet-style restaurant and I stayed away from the breads, pastas, and desserts (but I did have some sugar-free ice cream)

This spring our garden struggled a bit.  Most of our "cool weather" veggies (carrots, beets, radishes, lettuce) never even came up.  For example, we planted 48 beets and 1 came up.... planted 20 heads of lettuce and 2 came up. We planted everything in March and normally we have cool weather, especially nights, until May.  But this year the weather turned pretty warm in April and stayed warm.  On the flip side, our summer veggies, like tomatoes and peppers, are thriving in this heat as long as we keep them watered. 

Anyways, when we want some lettuce we normally cut a few leaves from the outside of the head, leaving the head in the ground to continue to grow.  Normally, we'll eat from the same heads of lettuce all summer as long as we can keep it from "bolting".   Remember that I said above that we only had 2 heads this year??  Well, we were outside the other night and Grant asked if he could pick some lettuce... I said, "Sure".  Next thing I know he's walking towards the house with the entire head in his hand.......roots and all..... pulled it right out of the ground.  It was so funny and actually so cute because he really wanted to go in the house, wash it, and eat some - and it was 8:30pm. Actually, this year,  he has been the best gardener of all the kids...making sure the garden is watered every single day.... so I guess he deserved a head of lettuce all to himself!! :)   Actually he shared it and that's the lettuce that I ate yesterday with my lunch. needing haircuts for a few weeks.... guess I better give them one today :)

  1. I've been thinking about making salmon cakes - yum! You've inspired me to do it - maybe for lunch one day (since I'm the only one who'll eat them). I'm trying to grow cherry tomatoes this year - I'm killing them by letting them get too dry. We'll see what happens. It's my first time trying :) The lettuce looks nice - I could enjoy that in a salad. I don't think I've made much progress this week but we'll see tomorrow ;)

    1. I found this great pacakge of frozen salmon cakes at the grocery store. I pan fried them in coconut oil for 5 minutes per side. Not sure if you could find something similar there - they were made with wild caught Alaskan salmon. We've since thrown the box away but if I recall they had 0 sugars and 2 carbs per patty. Two patties in a box for $4-$5. Since I wanted to assure that I ate high-protien lunches this week, I splurged for them. Otherwise, when we have them for dinner, for all 7 of us, I make them from scratch.

      The lettuce was so good, and obviously, tasted super fresh and home-grown (not even sure if you can explain that taste)?? Our town's farmer's Market opens this weekend so we're excited to see what will be offered.

  2. Thats so cute! and yeah! I love when we can have a good day :)
    I just love how you and trina always have a shake! I can't, well I COULD, i just rather not. Lol.
    I should though huh? mmmm... Im just trying to be grain free as well as legume-free. I have jillian michaels protein powder, but i rather not. I guess I'm a muncher!

    1. I love to "munch" and eat my food too. I only have a shake because we're up soooo early and I really don't want to eat food then. When I drink my shake that early, I stay full right through lunchtime. :)

  4. That is a memory to put in his life book for sure! I am so glad you are back on track! That is the best thing about the BFC, you just jump back in.

  6. How sweet! I'm guessing you told him how to pick lettuce for the future. I cut my husband and boys hair for years. I finally retired myself from the position recently.
