Week 9 ~ Day 6

Happy Wednesday Everyone!!

I had a great day yesterday in spite of the heat!!  The kids spent a little time outside but it was so darn hot that it was best to come inside and cool off!!  Here's Brooke watching a movie in the laundry basket:


I've already had to make a change to the meal plan I had made.  I know I've told you before that my oldest two children are in an upcoming local play (The Pirates of Penzance Jr.) and I've been helping with the costumes.  This means I've been spending time at rehearsals fitting kids and locating costume pieces.  My parents have been babysitting my three youngest kids while I have been there but they are out of town for a few days so I had to take them with me yesterday for the final fitting.  We ended up being there 2 hours so when we were finished it was lunchtime. 

Since I had a costume piece that I had to locate in town, we ended up eating lunch at Chick-Fil-A.  Did you know that if you ever find yourself there and haven't looked up the nutritional information beforehand, they will print it out at the register (sometimes you have to ask a manager because they're not all trained on how to do this - and it will print the info out only for the item(s) that you ask for).  Anyways, I ended up getting the Chick-Fil-A original chicken sandwich.  The s/c's for the entire sandwich were 5/42 so I decided to eat half of it with some fries.

After my husband got home from work we had to run into Fort Collins to grab another costume item at a store that closes early - this meant we had to do it before dinner. Sure, one of us could have stayed home and cooked but sometimes we like to run errands together - gives us time to chat in the car.  When we got home we decided it was a little late to start the tilapia since it was still frozen, so my husband made a wonderful dinner by placing two basted eggs, some pork carnitas, cilantro, cheese, and chipotle sauce on top of a pan-crisped corn tortilla. He's great at throwing things  together like this.  It was wonderful!  Sorry, I didn't take a photo - but I will next time we make it. 

So.... tonight we will have the tilapia and tomorrow we will have the salad with roasted chicken breast. The chicken is roasting right now. Remember, it's hot here and I don't dare turn my oven on during the day - but it's only 6:00am right now so I decided to be a rebel and do it!! :) 

So see... in spite of a very busy week and lots of running around,  I plan to continue eating well.  Will try the rest of the week to work in more veggies.  The play is this Thursday, Friday, and Saturday (4 shows) so I will have to make sure to have a plan in place so we don't skip any meals or grab convenience foods.  Wish you all lived nearby and could come and see it - it's a cute one!!

Here is what I ate yesterday:

Breakfast: My morning shake
Lunch:1/2 Chick-Fil-A sandwhich, small waffle fry
Snack: Small black plum
Dinner: 1 Corn tortilla, smoked pork, cheese, cilantro, chipotle cream sauce

  1. Boy she is a cutie and the sunset is awesome too. You are really busy and are still making great food choices. Will Chik-fil-a wrap the sandwich in lettuce?? Just wondering - there is one not too far from me and the chicken is good.

  3. So cute:) I love Chick fil a. LOVE it!!! There is only 1 that I know of in WA state and it is up near the Canadian border. I read on a blog that they use pickle juice to season the chicken. Interesting.
